Ungarisches Gulasch

Ingredients

- 2 lbs beef chuck, cut into 1" chunks
- 1.5 lbs onions, chopped
- 2 tbsp clarified butter
- 2 tbsp tomato paste
- 2 cloves garlic, minced
- 1 tsp caraway seeds
- 3 tbsp hungarian paprika
- 2 bay leaves
- 4 cups broth
- pinch of marjoram
- salt & pepper
Preparation
Heat clarified butter over medium heat in heavy saucepan (I use cast-iron). Add onions and saute until gold.
Add tomato paste, stir well, and turn off heat.
Add paprika and stir well for around 2 minutes off the heat.
Add the stock, bring to a boil, and simmer for ~30 minutes.
Add garlic, caraway seeds, bay leaves, marjoram, and continue simmering.
In the meantime, cut the beef chuck into chunks, salt and pepper, and add it to the saucepan
Simmer for at least 2 hours, until the Gulasch has noticeably thickened and the meat is fork-tender. Enjoy!
