Black Lentil Dal

  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1" piece of ginger, minced
  • 1 cup black lentils
  • 1 cup canned tomatoes
  • 1/2 tsp cumin seeds
  • 1 tsp chili powder
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/4 tsp turmeric
  • 4.5 cups water
  • ghee

Preparation

Heat ghee over medium in a cast iron dutch oven. Once hot, add onion and cumin seeds and cook until browned.
Add ginger and garlic. Cook until fragrant and make sure garlic doesn't burn.
Add tomatoes and remaining spices. Cook for 3-5 minutes and scrape up any browned bits stuck to the bottom of the pan.
Finally, add water and lentils. Bring to a simmer, reduce to lower, cover and cook for about 30 - 40 minutes. Stir occasionally to make sure lentils don't stick to the bottom fo the pan.
